Spicy Creamy Tomato Pasta

INGREDIENTS

  • 12-Ounces Whole Wheat Linguine

  • 1 Tbsp Unsalted Butter

  • 1/2 Cup Onion Diced

  • 8 Ounces Mushrooms, Sliced

  • 3 Cloves Garlic, Minced

  • 2 Cups Cherry Tomatoes

  • Homemade Tomato Sauce 

  • 1 Cup Plain Green Yogurt

  • 3/4 Cup Grated Parmesan Cheese

  • 1/2 Tsp Red Pepper Flakes 

  • 1/4 Cup Basil Leaves, Chopped

INSTRUCTIONS

1. Cook pasta according to directions.

2. Meanwhile, in a sauce pan, melt butter over over medium high heat. Add in onion and mushrooms and saute for 2 minutes. Add in garlic and tomatoes cook for about 5 minutes until onions, mushrooms and garlic are tender, stirring regularly.

​

3. Stir in tomato sauce Greek yogurt, parmesan cheese, red pepper flakes and basil leaves

​

4. Add the cooked pasta to the sauce and the greek yogurt and mix well, until all is combined.

​

5. Plate your pasta and garnish it with parmesan cheese, basil and extra red pepper flakes.

NOTES

  • Using can tomato sauce will work as well for this recipe.

​

  • Add more pepper flakes to the recipe if desired.

​

  • You can substitute yogurt for sour cream and unsalted butter for regular butter.

​
