Avocado Toast with Eggs
Healthy avocado toast. A protein packed breakfast with eggs and avocado! Simple, nutritious, & perfect for any meal of your day. Quick and easy mashed avocado spread on toast topped with a fried egg with a runny yolk or a scrambled egg. Its so good!

INGREDIENTS

2 Slices of Bread

1 Avocado
-
2 Eggs
-
Salt and Pepper
-
Lime Juice (Optional)
-
Cilantro Leaves (Optional)

Coconut Oil or Butter
-
1 Tomato
INSTRUCTIONS
1. Heat a little coconut oil in a pan on a medium flame.
2. Crack the eggs into the pack and cook sunny side for 3 to 4 minutes until the whites are set & yolks still runny. For scramble whisk the egg in a small bowl before adding to the pan.
3. Toast the bread slices and spread the avocado around with a drizzle of lemon juice and cilantro.
4. Top the toast with eggs and place the slice tomato on top.
5. Season with salt and pepper. Garnish with chopped cilantro leaves.


NOTES
-
Sliced bread: toasted, any variety would work. ( white or wheat)

Eggs: poached or fried, but keep the yolks runny.

Avocados: sliced or smashed.

Seasoning: salt and pepper.
